This is a very easy recipe that requires only a handful of ingredients and is simple to put together. A little prep work, a crock pot and time...is all it takes. You will need a crock pot and food processor (or blender) Ingredients: 4 lbs of Venison (steaks or roasts) (1) Large Onion (4) Bay Leaves (1) Cup of Vinegar (2) Limes (Juiced) (2) Cans of Chipotle Peppers in Adobo Sauce (Use 1 can for a milder version) (4) Garlic Cloves (Minced) (1) Cup of Chicken Broth 1/3 Cup of Bacon Fat (Any pork or beef fat will do) (1) Cup of Chopped Cilantro Spices: (1) T. of Cumin (1) T. of Oregano (1) T. of Salt (1) t. of Black Pepper (1) t. of Ground Cloves Trim all fat and sinew from venison... Slice onions... Place most of the onions on the bottom of the crock pot, add venison and place bay leaves on top... In the food processor...add vinegar, spices, chipotle peppers, garlic, fat and lime juice... Blend all ingredients and pour over the venison... Add chicken broth to the crock pot... Cook on High for 4 hours and then 3 hours on low... After the 7 hours is up, remove any bones from your venison, remove bay leaves, shred the meat and add cilantro... Set crock pot to warm and serve on tortillas with Pico de Gallo or any of your favorite toppings. Enjoy!! This recipe has a little kick to it, but not overpowering. Again, to reduce the spiciness, just use (1) 8oz. can of the Chipotle Peppers. If you like spicy Mexican food and love venison...you'll love this!
