Ingredients: 3 cups of oil. 3 duck (goose) fillets, Box of Cheezit
crackers
(white chedder is best, but Jalapeno cheese is good also) 4 eggs
Prep: Crush crackers in a large bowl (a cookie sheet with wax paper and
a
rolling pin also works well) Heat up oil in a frying pan to 350. Slice
duck
breasts into small pieces (1/4" to 1/2" thick and about 2" long).
In a mixing bowl, beat up egg just until it starts to "swirl". Take
sliced
breast meat and pat dry with a paper towel. Dip in egg and roll in
cracker
crumb.
The Finish: Add cracker coated breast to the frying pan. Cook for 3 to
5
minutes. Remove and drain on a plate lined with paper towels.
I used to make this meal all the time in college. It is also a killer
recipe
for fish, pheasant, quail and chukar.
Serve with fried potatoes or french fries and of last, but not least, a
frosty mug of your favorite ale. I will guarantee that your Doctor will
approve of this recipe!!
